Summer is the perfect time for popsicles! These peaches and cream popsicles are yummy, satisfying, and also healthy!

As a mom of four, I am often looking for snacks for my kids that are healthy and filling (so they don’t come back in an hour asking for another snack, ha!).  A lot of the recipes I’ve seen are healthy, in that they are basically just pureed fruit with some juice or water, but we know that adding protein is essential to keeping the kids (or us!) full for a longer amount of time. (Another benefit of adding protein is that it keeps all the sugar from the fruit from spiking your blood sugar as much as it does without it – so bring on the protein!)

So here it is — super simple:

Healthy Peaches and Cream Popsicles

You’ll need 3 peaches, 2-3 T. honey, 1/2 c. cottage cheese, and 1 c. liquid.

Overripe peaches work best because they’re extra-sweet. Plus, no one really wants to eat them anyways, so it’s better to just put them into the blender. 😉 How much honey you use will depend on how sweet your peaches are.

Cottage cheese is full of protein, vitamins, and minerals! I don’t like to eat it because of the texture (gag!), but once it’s blended, I can take advantage of its nutritional benefits. 🙂

For the liquid, I used some unsweetened iced tea that I had in the fridge, — papaya pineapple flavor, which is SO tasty — but you could also use juice or water. (FYI, when I use water, I add a dash of sweetener, too!)

You’ll need peaches, honey, cottage cheese, and liquid.

Put all the ingredients into a blender, and blend it until smooth.

Taste-test!

At this point, I taste what I just blended and see if it needs to be sweetened more. It’s your last chance to make it sweeter! 😉 (Our favorite sweetener is this type of Stevia — no bitter aftertaste like Stevia in the Raw, and you only need a dash!)

Now, pour the peaches and cream popsicle mixture into the molds.

How many popsicles this recipe makes depends on the size of your popsicle molds, and there are so many different ones out there.

My four-year-old loves to help me in the kitchen, so I let him stick the popsicle sticks into the molds. 🙂

What I do when I have extra popsicle mixture left is freeze it in ice cubes to put in smoothies!

Pop them into the freezer until they’re firm, then enjoy!

With the 4th of July just around the corner, I needed a quick, but cute decoration for my front door! This Paint Stick Flag came together in just one afternoon and since I had several basic supplies on hand, was literally one of the cheapest crafts I’ve ever made.

Supplies:

9 paint sticks

14 craft sticks

red, white, and blue acrylic paint

twine

hot glue gun and sticks

drill

 

Start by drilling holes in your paint sticks large enough for 2 strands of your twine to fit through.

I marked dots about 1″ from the ends of the sticks, to make drilling the holes simpler.

Now you are ready to paint! You will need 5 red sticks, 4 white sticks, and 14 blue craft sticks.

Tips for Making Great Burgers

Tips for a Great Burger

This time of year, I start using the grill far more often than I use my oven – it’s just too hot! We put just about EVERYthing on the grill. In the summer here in Greece, it’s either cook outside, or eat a cold dinner!

One of our family’s favorite foods to put on the grill is definitely burgers! You can season them all different ways, as well as top them with different veggies, so they don’t always have to be the same….plus you can let your creativity shine!

Tips for Making Great Burgers

Here are a few tips for making great burgers that I’ve compiled over the years — these will ensure that you get a moist, flavorful burger every time!

1. Use a fattier meat

If you use extra-lean meat for your burger, it’s going to be dry. You want to get a fattier meat, like 80/20. That fat is important in keeping the meat moist during the cooking process!

2. Season your meat well

If you don’t put flavor into your meat….surprise! …it’s not going to have flavor! Don’t be afraid to put a lot of seasoning into your meat because this is what will set apart your burger from a boring burger.

My go-to seasonings for a basic burger are salt and pepper, oregano, and garlic powder. Sometimes I change it up and do chili powder, cumin, and smoked paprika for a Mexican flavor.  You can also add crumbled feta or blue cheese with oregano and fresh garlic for another flavorful option!
