And it makes a nice full 9×13 pan, so it really is nice to make for a group of people. You can easily halve it and bake it in a square pan though, if you don’t need so many servings.
Broccoli, believe it or not!, is one of my kids favorite vegetables. They like it steamed, roasted, or even raw with ranch. For this recipe, I just cook it on the stove in some boiling water for a couple minutes. You’ll want it to still be firm, because it will continue cooking during the baking.

How long does it last?
Allow the leftovers to cool and store them in the fridge for up to 3 days. To reheat, you can place the dish uncovered in the oven at 350° until it is warmed. Or simply, reheat a serving in the microwave.

Easy Broccoli Casserole
Creamy, cheesy, buttery broccoli casserole with a crispy Ritz topping. Perfect holiday side dish!
Ingredients
- 12 cups, broccoli florets
- 2 cans, condensed cream of mushroom soup
- 1 cup sour cream
- 2 eggs, beaten
- 1/2 cup heavy cream
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 3/4 tsp salt
- 3/4 tsp pepper
- 4 cups cheese, medium cheddar & sharp cheddar
- 1 1/2 sticks butter, melted
- 2 sleeves Ritz crackers, crushed
Instructions
- Preheat oven to 375°
- Cook the florets in a pot with a small amount of boiling water, just until bright green in color. 3-4 minutes. Then rinse in cold water and pat dry with paper towels.
- In a large bowl, stir together the soup, sour cream, eggs, cream, herbs and spices, along with 2 1/2 cups of the cheese.
- Mix in the broccoli.
- Spread into a greased 9x13 casserole dish.
- Sprinkle the remaining cheese over the broccoli.
- Top with Ritz crackers and then drizzle the melted butter over the entire top.
- Bake for 30-35 minutes, checking the tenderness of the broccoli to decide when it is done.
