I recently discovered Lori (@cookingwithlori) via a podcast interview and I was instantly intrigued with her spice packets and recipes! She’s a mom of three boys and launched her small business in 2020 to help busy moms and wives come up with yummy, clean meals in a pinch. A couple weeks ago, I tried her Perfect Chicken Breast recipe – I pretty much always have chicken breasts in my freezer. I buy a ten-pound bag of frozen chicken breasts or breast tenderloins and divide them up by two or four into freezer bags so I can pull them out as needed throughout the next couple months. Works perfectly for me and my husband 😉

I’ll have to be honest, at first I was a little skeptical when I looked at the chicken breast recipe. It looked too easy – just three ingredients??

Lori recommends roasting veggies with the chicken for an easy one-pan meal. At the time I made this recipe, I was using up my fresh produce out of my fridge because my husband and I were getting ready to fly out to Arizona to visit my parents. So I didn’t have a lot of fresh veggies to roast, but I did have some onion, cauliflower, carrots, and zucchini. It was kind of a random combination but it ended up tasting so yummy! I roasted the carrots and zucchini separately but I threw the cauliflower and onions in the pan with my chicken breasts, which ended up being a great decision.

 

For this recipe, all you need is 3-4 chicken breasts, 2 tablespoons olive oil, and Lori’s perfect chicken seasoning packet. Drizzle the oil over the chicken, sprinkle the yummy seasoning on both sides of the chicken, and roast! It’s really doesn’t get any easier than that, especially if you’re a busy mom or wife 😉

My aunt got me this Lodge pan for my wedding shower and I use it all. the. time. It’s a great size for roasting veggies, baking chicken, a casserole for the fam, or a yummy apple crisp)!

The seasoning on this chicken is so amazing – it almost has a curry taste but it’s not too strong of a taste, which I loved. The chicken had such warm and comforting flavors and the spices tasted so good on the cauliflower too! My husband was so impressed with the flavors in this dish.

I wasn’t sure how tender the chicken would be, but it surprisingly turned out to be incredibly tender and juicy! I will say, I did have to bake mine much longer than Lori’s recipe card called for (which was twenty minutes). My chicken breasts may have been thicker than what she had used when she made it. I ended up baking mine for about 40 minutes until the internal temperature reached 165 degrees.

Lori's Perfect Chicken Breast

Yield: 3-4 servings

Tender and juicy chicken breasts with warm, bold flavors.

Ingredients

  • 3-4 chicken breasts
  • 2 tablespoons olive oil
  • Lori's Perfect Chicken Seasoning Packet
  • optional veggies

Instructions

  1. Preheat the oven to 365 degrees.
  2. Drizzle olive oil on both sides of the chicken.
  3. Sprinkle the seasoning packet contents on both sides of the chicken.
  4. Add optional veggies to the pan.
  5. Bake for 20 minutes or until the internal temperature reaches 165 degrees.

*I also like that Lori’s recipes and seasoning packets are good for small-ish families. As a newly married girl, I’m finding it hard to make the right amount of food without having leftovers for daaaaaays. My husband and I each come from families with eight kids, so all our lives we’ve been used to making food enough for a small army. After six months of marriage, I feel like I am *just now* learning how to cook for two haha! So I appreciate that these recipes serve 3-4 instead of 8-10 😉
