Easy Ice Cream Sandwiches – Summer Recipe great for kids summer treats, pool parties, and ice cream parties

I was looking for a quick and easy treat for a summer afternoon, and came up with these mini ice cream sandwiches using just a few ingredients from the pantry. Any kid will love these delicious little summer desserts, and the easy recipe is something that they can even help make.

These kid-friendly summer desserts are great for parties or just for a summer afternoon with cousins or friends! Our kiddos love playing these super fun Activities for Kids Using Pool Noodles and cooling off with these ice cream sandwiches.

I didn’t want any big messes when I made these, so I experimented and found the secret to filling ice cream sandwiches without all the mess! I’ll show you that after we get started with the ingredients you will need to make these yummy summer treats.

Here’s what you’ll need –

  • 1 package Chips Ahoy “soft & chewy” cookies {I used the Walmart brand!}
  • 1 box instant pudding mix {choose your flavor, I used banana}
  • 1 tub whipped cream, thawed
  • 1 cup milk
  • rainbow sprinkles

I whipped the milk & instant pudding, then folded in the whipped cream. I then froze the pudding mixture for just an hour, to get it very thick, but not frozen solid. 

When I first tried to fill the mini ice cream sandwiches, I got very discouraged because it was messy trying to do it quickly before my pudding “ice cream” started to melt and make a mess! BUT – I have a couple tips (learned by trial and error!) to make the process go much smoothly.

 ** SCOOP YOUR FILLING INTO A GALLON SIZE ZIPLOC BAG, AND SNIP A CORNER OFF ONE END OF THE BAG, TO SQUEEZE THE FILLING OUT.**

**LAY OUT HALF OF YOUR COOKIES ON TO A WAX PAPER LINED COOKIE SHEET. SQUEEZE THE FILLING ON TO EACH COOKIE, THEN FREEZE FOR 1/2 HOUR . . . . WITHOUT PUTTING THE TOPS ON TO THE SANDWICHES YET!**

 ** AFTER THE FILLING ON EACH COOKIE IS FROZEN, IT IS EASY TO PUT ALL THE TOPS ON, AND ROLL THEM THRU THE SPRINKLES. I HAD MINIMAL MELTING AND MESS!**

Mini Ice Cream Sandwiches

Ingredients

  • 1 package Chips Ahoy soft and chewy cookies
  • 1 box instant pudding (your flavor choice)
  • 1 tub whipped cream, thawed
  • 1 cup milk
  • sprinkles

Instructions

  1. Whip milk and instant pudding mix for 5 minutes on medium speed.
  2. Fold in whipped cream.
  3. Spoon mixture into gallon ziploc bag and snip off one corner of bag.
  4. Freeze mixture for 1 hour.
  5. Lay out half of the cookies onto a wax paper lined cookie sheet.
  6. Squeeze filling onto each cookie.
  7. Freeze pan of filling-topped cookies for 1 hour.
  8. Remove from freezer, and gently push the top cookie onto each sandwich.
  9. Dump sprinkles onto a sheet of wax paper, and roll each sandwich sideways thru the sprinkles until they stick on the filling edges.
  10. Freeze completed sandwiches for 1/2 hour, then serve.

Notes

The assembled sandwiches can be stored in the freezer for several days, stored in a gallon ziploc bag. Before serving, you will want to thaw them on counter for 1/2 hour or until cookies are soft.
