We LOVE our sheet pan recipes because they are such a simple way to serve a large number of guests, easy to transport, and always turn out so deliciously!! These AMAZING OOEY GOOEY SUMMERY CHOCOLATEY MARSHMALLOWY S’MORE’S BARS are one of my all time summer favorites to serve to my friends and family!

S'mores Bars {to feed a crowd}

Ingredients

Crust

  • 2/3 cup margarine, melted
  • 3 cups graham cracker crumbs
  • 6 Tbs sugar

Brownie Layer

  • 2-9x13 brownie mixes, and ingredients called for on the box

Topping

  • 6 cups mini marshmallows
  • 8 whole graham crackers, broken into small pieces
  • 1 cup milk chocolate chips
  • 4 Hershey's milk chocolate bars, broken into small pieces

Instructions

  1. Heat oven to 350°. Generously grease sheet pan or 2 9x13 pans.
  2. Mix crust ingredients and press into bottom of pan. Bake 10 minutes.
  3. Make brownie batter as directed on box and gently spread over graham cracker crust. Bake 25 minutes or until toothpick inserted in center comes out clean.
  4. Set oven to broil.
  5. Immediately sprinkle marshmallows and graham pieces over the brownies. Broil about 5 inches from heat for 1-2 minutes until marshmallows are golden.
  6. Sprinkle chocolate chips over the top.
  7. Let cool 20 minutes, then top with Hershey pieces, sticking them into the warm marshmallows.
  8. Cool completely and cut into bars.

***When you are using the broiler on your oven, be sure to leave the oven door cracked and keep a continual eye on them! All broilers are different, as soon as you see the marshmallows browning and swelling, they are very close to done. My broiler does not distribute the heat perfectly, so I end up rotating the pan a couple times to evenly brown the top. Just like when roasting marshmallows over a fire, they got too hot, they will catch on fire! So please be careful. We love the roasted marshmallow campfire taste the broiler gives and I have never had a problem with them burning or catching on fire.

  1. Need to make 150, with full sheet pans, could I just use whole graham crackers on bottom?

  2. I want to make this for family reunion. Do you think it would be ok to bake the brownie on a Thursday then rewarm in the oven on Sunday and add the marshmallows and chocolate then? Also. Do they need to set 20 mins before serving? Does that make it easier to cut and serve?

    I hate to be Debby Downer but please edit your recipe to call for more space from the broiler. I originally had the sheet on middle rack and I went back and read the 5-6 inches so moved the pan up the top rack. It started an oven fire and ruined my cabinets above. Very scary. It is my fault and mine was probably 3 in. away from broiler but would love to prevent another fire. Thank you.

  10. HI – Tried some other smores bars, but would like to try with your brownie addition. Can I make this with 1/2 sugar to make a little less sweet. Not sure if the sugar is needed to keep crust together.

    OMG these are so delicious. I had the littles test bite before dinner (such a tease). I will definitely keep the recipe in my favorites file. Next time I will cut the recipe in half to feed a smaller group.

    I don’t understand. If I’m using a half sheet pan as you mentioned you used, Am I still buying 2 brownie boxes?

    • A half sheet pan is the size of 2- 9×13 pans! So yes, 2- 9×13 brownie mixes are needed.

  16. Things were going well until I put my brownies back in to broil. Don’t broil for more than about 10-20 seconds! Mine were basically on fire when I took them out of the oven after about 30 seconds. Other than that, the recipe is easy and I’ll probably make them again… hopefully with less smoke next time. My husband said they tasted really authentic though. 😕

    I made and brought this yesterday at a children’s home I volunteer. It was a hit!!! Even the staff were complimenting how it tastes good. One mistake though…cookie sheet pan is not the same as half sheet pan 😁.

  22. Looks great but very confusing … all your pictures have 1 sheet pan, but in recipe you say to grease 2 9×13, but next you say to press crust into pan – singular. What size pan do we use to match the recipe you have published here?

    • Hi Sue! You’ll see in our Recipe that step 1 says “Generously grease sheet pan OR 2 9×13 pans.” We prefer the sheet pan, but if you don’t have one, 2 9×13’s will work! 😉
