This savory spinach yogurt sauce adds a flavorful punch to pretty much anything you want to dip in it. 😀

I live in Greece, and here it’s normal to have some kind of yogurt- or feta-based sauce on the table with our main meal.

You might have a garlic-feta-yogurt dip (one of my favorites!!), or tzatziki (with cucumber and dill), or ktipiti (red pepper-feta-garlic)

I’ve come to love this Greek tradition of strong, savory flavors to add to our food, and I normally have something like this on the dinner table.

We normally just get a little sauce onto our fork along with our other foods (rice, vegetables, chicken, etc.)….but we also dip meatballs, our FAVORITE chicken kebabs, or bread into it as well!

HERE’S WHAT YOU’LL NEED TO MAKE THIS SPINACH YOGURT TZATZIKI SAUCE: 

2 cups of fresh spinach, salt, 1 garlic clove, and 2 cups of plain Greek yogurt

Yes, that’s only 4 ingredients (plus water)!!!

This recipe is really simple to make, and I’m sure you’ll fall in love with it once you taste it!

HOW TO MAKE SPINACH YOGURT TZATZIKI SAUCE:

The first thing you need to do is chop the fresh spinach – I pack it into my 2-cup measuring cup to make sure I’ve got a lot.

After you’ve chopped the spinach, put it into a microwave-safe dish, along with 1/3 c. water — cover, and microwave for 5 minutes on high.

 

After you’ve wilted the spinach in the microwave, you’ll need to drain it and cool it before you should add the yogurt.

Use a mesh strainer to really push all the liquid out of the spinach so your yogurt sauce isn’t runny! 

 

While the spinach is cooling, you can add the salt and garlic to it.

GARLIC HACK: Remove the center of the garlic clove for a more mellow garlic taste!

If you remove the center of the garlic clove, the taste will be more mellow, and not so spicy.

Add minced garlic and salt to the drained spinach.

Add 2 cups of plain Greek yogurt to the spinach-garlic-salt mixture and mix until evenly combined.

Spinach Yogurt "Tzatziki" Dip

Simple yogurt sauce with a savory garlic-spinach flavor!

Ingredients

  • 2 cups packed fresh spinach, chopped
  • 1/3 c. water
  • 1 t. salt
  • 1 garlic clove, minced
  • 2 c. plain Greek yogurt

Instructions

  1. Chop 2 packed cups of fresh spinach.
  2. Place spinach in a microwave-safe dish and add 1/3 cup water.
  3. Microwave on HIGH for 5 minutes.
  4. Squeeze cooled spinach completely dry and discard liquid.
  5. To the spinach, mix in 1 t. salt and 1 minced garlic clove (take out the center for a milder taste!).
  6. Add 2 cups plain yogurt and mix until everything is well-combined.
  7. Enjoy as a sauce or dip for anything you like!
