The other day, I realized that my almost-2-yr-old daughter had never had finger jello before . . . what a fun treat it is for kids! I wanted to do a pretty layered finger jello, but was only seeing recipes with 5-8 layers. And who has time for that. lol.

So I came up with this super simple, non-time consuming form of layered finger jello – that still looks fantastic!

This is a great and easy idea for a fun Valentine’s Day treat for school, home, or a Valentine’s Day party. It is even a recipe that the kids can help make. And we do have another treat that is GREAT for kids to help with – our Valentine’s Day Pretzels!

I used sugar-free strawberry jello for the top and bottom layers, and a creamy sweetened condensed milk middle layer. The only ingredients that you need for this recipe are red jello mix, plain gelatin, and sweetened condensed milk.

Is jello gluten free? Yes! This jello is gluten free, so it is great for a party or gathering where you might have those who don’t eat gluten.

To make the jello, I just used:

  • red jello mix plus plain gelatin and water for the bottom layer
  • sweetened condensed milk and plain gelatin and water for the middle layer
  • red jello mix plus plain gelatin and water for the top layer

You will need to let the bottom layer set in the fridge for about 30 minutes before putting the middle layer on. Then another 30 minutes in the fridge before putting the top layer on. You don’t want those pretty layers to mix!

Valentine's Day 3 Layer Finger Jello

Ingredients

  • 4 3-ounce boxes red jello gelatin (I used sugar free strawberry)
  • 4 envelopes Knox unflavored gelatin, divided
  • One 14-ounce can sweetened condensed milk
  • boiling water and cold water

Instructions

In a medium bowl, mix two boxes of red jello with 1 envelope of unflavored gelatin. Add 2 cups of boiling water and stir to dissolve. Cool to room temperature and pour into a 9x13-inch glass pan that has been sprayed with nonstick spray. Refrigerate for 30 minutes. Make sure to put it in a level spot in your refrigerator.

While the first layer is setting, prepare the white layer. In another bowl, mix sweetened condensed milk with 1 cup of boiling water. In a separate small bowl, sprinkle 2 envelopes of unflavored gelatin over 1/2 cup of cold water. Let stand a few minutes and then add 1/2 cup of boiling water to dissolve the gelatin. Add to the milk mixture and stir to combine. Cool to room temperature. Pour this milk mixture over the first layer of red jello. Refrigerate for 30 minutes.

While the white layer is setting, prepare the top layer. In a bowl, mix two boxes of red jello with 1 envelope of unflavored gelatin. Add 2 cups of boiling water and stir to dissolve. Cool to room temperature and pour on top of the white layer. Refrigerate for 30 minutes.

Let jello set before cutting. Use a sharp hot knife to cut, and then use a metal spatula to remove squares from pan.
