Homemade Samoa Granola (Tastes like the Girl Scout Cookies!)

Rich caramell-y coconut and chocolate chip granola

Ingredients

7 cups quick oats

1 cup brown sugar

2 cups unsweetened coconut

1/2 cup oil

1/2 cup boiling water

1/2 Tablespoon salt

1/2 cup semi sweet chocolate chips

1/2 cup caramel bits

2 Tablespoons heavy cream

 

Instructions

  1. Combine oats, sugar and coconut in a large bowl.
  2. In a small bowl, mix together oil, water, and salt.
  3. Pour the liquid mixture over the dry ingredients.
  4. Spread in 3 large pans and bake at 225° for 3 hours. Don’t stir unless absolutely necessary. (this will help the granola to cluster)
  5. Remove from oven and sprinkle chocolate chips over the top while the granola is still warm.
  6. When granola is cooled completely, melt the caramel bits and cream in a microwave safe bowl. Drizzle over the top of the cooled granola. Let cool until the caramel is firm.
