Here’s a simple side for you! These Garlic & Dill Roasted Carrots are a perfect Easter Dinner side dish or a quick veggie fix on a busy weeknight. They truly are SO SIMPLE! And so tasty, kids gobble them up. Win Win!
Just a few simple spices, a drizzle of oil, carrots and a hot oven and you are all set! After roasting for about 25 minutes, these carrots are sweet, salty, browned and tender. My toddler boys literally can’t stop eating them! 🙂
I roast them for about 25 minutes at 400 degrees. But sometimes, I’ll leave them in a few minutes longer if they are not browned quite enough. Taste and give a little more salt if needed. The carrots are naturally sweet, but so yummy when you can taste the sweet and salty combination.
- 1 bag baby carrots
- 1/4 tsp garlic powder
- 1/2 tsp dry dill weed
- drizzle of oil
- Preheat oven to 400°.
- Spread carrots on roasting pan.
- Sprinkle with spices and a drizzle of oil. Salt and pepper generously. Mix until evenly coated.
- Roast for 25-35 minutes, or until carrots are lightly browned.
