Shred or chop the brussel sprouts and kale as thinly as possible. You want them to be like shaved strands. Copycat Cracker Barrel Brussel Sprouts n Kale Salad

Shredded brussel sprouts and kale, craisins, and toasted pecans dressed in a maple vinaigrette

Ingredients

  • 1 bunch kale
  • 1 lb. brussel sprouts
  • 1 6 oz. bag craisins
  • 8 oz. chopped pecans

Maple Vinaigrette

  • 1/2 c. olive oil
  • 1/4 c. apple cider vinegar
  • 4 Tbs. maple syrup
  • 1 tsp. dry mustard

Instructions

  1. Shred or thinly slice kale and brussel sprouts and put in salad bowl.
  2. Toast pecans in skillet over high heat for 60-90 seconds.
  3. Add pecans and craisins to bowl.
  4. Blend all vinaigrette ingredients well.
  5. Pour vinaigrette over salad and stir to evenly coat. Let sit in fridge for at least 4 hours or overnight.

    I had some curly kale in my garden and some brussels sprouts in the fridge. I need a salad to go with the main dish (15 bean soup) for supper. Since I had all the ingredients I decided to try your recipe. I tasted it when it was put together, and added a little sea salt and freshly ground pepper (to suit my taste). It is very good, even before it marinates. I will be making this again! Thank you.

  9. Great recipe! I’ve only had the cracker barrel version once but this tastes about like I remember. I used about half the amount of craisins and pecans – I used toasted, chopped pecans, maybe the flavor goes further? Easy enough to adjust to taste. The longer this sits in the fridge, the better it gets.

    Do you include the hard core of the Brussels Sprouts or remove it? Use a chopper to chop both Brussels Sprouts and Kale. Is there an easier method?

    • Hi John! We slice the hard core off of the end of the Brussel sprouts and throw it away. Then you can either slice the Brussel sprouts and kale by hand, or even use a food processor to chop them to the desired size!

    I love the salad at CB & couldn’t figure what is in the dressing (my husband says it’s too sweet). I made about half the recipe & it tastes great. Next time I will use my food processor because I think CB’s pieces are smaller. I also think letting the salad sit a few hours will improve it.

    I couldn’t find craisens anywhere, so I used some frozen blueberries I had on hand. Otherwise, everything was as directed, and certainly just as delicious as Cracker Barrell’s version! Thank you so much for the recipe!!

    I am addicted to this salad! Not only is it fresh and delicious, but it’s so easy to make because everything except the kale is on hand already. I usually leave out the brussel sprouts to quicken the process, and love adding fun ingredients to vary it up- like sliced strawberries, sunflower seeds, and feta! What a fabulous recipe! THANK YOU!

I made this copycat cracker barrell kale salad using your recipe….the dressing was horrible….just oily and no flavor….I had to “doctor it up” to get it to taste like cracker barrels kale salad….i used dijon mustard, added 3 x’s the maple syrup, and 1/2 the olive oil and apple cider vinegar instead of the ingredients you state in your recipe.
