Blueberry Stuffed French Toast

Warm creamy blueberry filling sandwiched between two thick slices of bread and fried to perfection.


8 ounces cream cheese, softened

8 ounces sour cream

12 ounces of blueberries

1 tablespoon cinnamon

2 teaspoons vanilla

1/2 cup powdered sugar

4 eggs

1/4 cup milk

1 tablespoon cinnamon

2 teaspoons vanilla

butter for frying

blueberries, syrup, and/or powdered sugar for topping


Combine cream cheese, sour cream, blueberries, cinnamon, vanilla, and powdered sugar and mix well.

Chill for 20-30 minutes.

Mix eggs, milk, cinnamon, and vanilla.

Scoop 1/3 cup of filling on to bread and make a sandwich.

Dip in the egg mixture to cover completely.

Fry in butter about 3 minutes per side or until golden brown.

Serve with blueberries and/or syrup and powdered sugar.
