These muffins are light and fluffy even though they have healthy old-fashioned oats in them! The juicy blueberries burst with flavor and are pillowed in a soft tender muffin. I whipped them up in no time! Super quick and easy breakfast idea, and they freeze great as well.
The secret to these muffins is –
DON’T overmix!
First you’ll blend all of the dry ingredients together and toss the blueberries in. Tossing the blueberries with the dry ingredients keeps the blueberries from sinking to the bottom of the muffins. This way they’ll be evenly dispersed throughout the muffins.
After you beat the wet ingredients together, just pour the wet mixture over the dry mixture and very gently fold them together. It should only take a few turns of the spatula. The batter may still look lumpy but that’s ok. That’s the way you want it for a soft tender muffin rather than a chewy dense muffin.

Light and fluffy muffins with juicy blueberries and healthy oatmeal!
Ingredients
- 1 cup old-fashioned oats
- 1 1/4 cups all purpose flour
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 1/2 cups blueberries
- 1 cup milk
- 1/4 cup vegetable
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 425°F. Lightly grease the cups of a standard 12-cup muffin pan.
- Blend together the dry ingredients and gently stir in the blueberries until coated.
- Beat the liquid ingredients together until foamy.
- Pour the wet ingredients into the dry ingredients. Using a rubber spatula, gently fold the wet ingredients into the dry just until blended. Don't stir too much or your muffins will be chewy!
- Fill the cups of the muffin pans almost to the top.
- Bake the muffins for 15 to 17 minutes, or until a toothpick inserted into the middle of one of the center muffins comes out clean. Remove them from the oven, and after 5 minutes turn out of muffin pan and let cool completely.

Make a few batches and freeze for later!
