Chicken Seasoning: Roasted Chicken Rub Spice

My favorite chicken seasoning is this chicken rub spice mix! It combines all my favorite, bold spices into one delicious chicken seasoning! If you’ve got these ingredients in your spice cabinet, you’ll want to mix some up right away! ๐Ÿ™‚

This chicken seasoning can also be rubbed onto zucchini slices, potatoes, or whatever other vegetables you like to roast. Those bold spices really enhance roasted vegetables!

In our home, we eat chicken pretty frequently. (If you’ve seen some of our other chicken posts, 10 Reasons Why I Have Cooked Chicken in My Freezer,  Copycat Chick Fil A Grilled Chicken Smokehouse BBQ Bacon Sandwich, Creamy Chicken Salad Croissants, Skillet Chicken Fajita Rice, ….ok you get it, we like chicken. :-))

I like to try lots of different chicken recipes, but this chicken seasoning on a flat-roasted whole chicken is our favorite! (We also flat-roast whole chickens on the grill – that is an amazing experience, let me tell you!) ๐Ÿ˜‰

The thing is, when you “rub” a chicken with a spice mix, it’s like it’s sealing the juices in, and in turn you get a moist, delicious, flavorful piece of chicken!

CHICKEN SEASONING RECIPE INGREDIENTS

This chicken seasoning spice rub mix is a cinch to mix up, and you probably already have the spices on hand. 

If you don’t already have these spices, I recommend stocking up, because these can be used for SO many things. They ramp up the flavors of meats and vegetables a lot! 

I love using this mix on washed, cubed potatoes – I toss them in this spice rub mix, drizzle with olive oil and toss some more, than put them single layer onto a roasting sheet lined with parchment paper. Roast at 400 degrees F for about 20-25 minutes, and they’re nice and crispy and full of flavor!

What do I need to make chicken seasoning?

  1. sweet paprika (THIS is what makes it, I do believe): this spice is not spicy, it has a warm, sweet-pepper taste.
  2. garlic powder: garlic powder can be overpowering, yet a little is a perfect addition for meats – we just use less of it than the other spices.
  3. black pepper: a hint of pepper takes chicken seasoning up a notch, so we use just enough to add what this needs.
  4. dry mustard: dry mustard by itself has no flavor ๐Ÿ˜ฎ (did you know?) but when combined with other spices and oils, its pungent flavor is released. Interesting!?
  5. oregano: I love the rustic earthiness that oregano adds to this chicken seasoning! I use Greek oregano which tops other varieties, in my opinion. Greek oregano is harvested when the plant has flowered, which makes the flavor more savory and earthy.
  6. salt: adding salt brings out all the flavors of the spices, so don’t skimp. ๐Ÿ˜‰

Oh, and of course you can use this on pork as well. We don’t eat a lot of pork steaks, but I want to get some to put this spice rub on when we’re grilling this summer! Mm, I’m sure it will be so tasty!

HOW TO SEASON CHICKEN

Mix up the chicken seasoning ingredients until it looks like there aren’t any clumps in it, then sprinkle it on your meat and rub it in a little with your hands. Drizzle a little olive oil on the meat after the spice rub is rubbed in….and then lightly massage it in. 

You can do this the night before, or the day of. The longer you let this chicken seasoning spice rub sit on your chicken (up to 24 hours), the better the end flavor of your chicken dish will be!

What should I season my chicken with?

Always include salt to bring out the flavor of the spices and herbs that you choose – but spice combinations are totally up to you! If you like spicy, add hot red pepper. Garlic lover? Add garlic powder. If you love those earthy flavors, add a good portion of dried oregano, basil, thyme, or parsley.

Here are some examples of basic chicken seasoning combinations:

Southwest seasoning: feature chili powder, chipotle powder, and cumin

Chili seasoning: feature chili powder, onion powder, garlic powder, and paprika

Curry powder: feature turmeric, cumin, dry mustard, nutmeg, and cayenne

Greek style: feature oregano, parsley, basil, and garlic powder

Lemon pepper: feature lemon zest with salt and pepper

How do you season chicken before cooking?

Apply salt, spices, and herbs to a rinsed and well-dried whole chicken, then drizzle olive oil over it and massage it all in.

Let this seasoned chicken refrigerate for several hours for the best flavor!

If you sprinkle it a little on right before cooking, only the surface will have the spice rub taste.

How do you get seasoning to stick to chicken? Can you put oil onto chicken before seasoning it?

If your spice rub is not sticking to your chicken, rub a tiny bit of olive oil onto your chicken to help the spices stick better.

You can also mix olive oil into your chicken seasoning and mix it up to make a kind of ‘paste,’ that will easily stick to chicken. I do this a lot of the time!

When should you season chicken?

Meat should be seasoned several hours before cooking in order to bring out the best, fullest flavor.

This article says that the real secret to amazing meats is salting it 24 hours beforehand!

So, if you think ahead, it takes no extra effort to pre-salt or pre-season your meat (especially a whole chicken) and taste amazing results.

This chicken seasoning is a spice rub with bold, warm flavors!

Ingredients

  • 2 T. sweet paprika
  • 1 T. salt
  • 1 T. oregano
  • 1 T. dry mustard
  • 1 t. black pepper
  • 1 t. garlic powder

Instructions

  1. Combine all spices in a bowl and mix.
  2. Store in an airtight container or jar.
  3. Rub on chicken or other meat, or veggies, before roasting.
