I like to meal prep these oven-baked eggs. They’re quick to prepare, then I put in my Pyrex glass storage container in the refrigerator and my husband and I can both grab one out for breakfast. Eggs are a great source of protein as well as many other nutritional benefits. Having these on hand keeps us from grabbing something else quick that might not be so healthy. 🙂

 

TIP if you’re preparing these ahead:  I like to undercook these a little bit, since I will be putting them in the microwave for 30 seconds or so to heat them throughout the week. I’ve found 30 seconds in the microwave is perfect.
